Hi, I’m Matt – a baker, teacher, and lifelong lover of all things dough.

My journey into baking started in the fast-paced world of Michelin-starred kitchens. It was there, surrounded by some of the best chefs in the industry, that I discovered my true passion: bread and pastries. There’s something magical about turning flour, water, and yeast into something so deeply satisfying – whether it’s a crusty loaf of sourdough or a delicate, buttery croissant.

After my time in fine dining, I moved to the Cotswolds, where I had the chance to lead a bakery and work closely with some of England’s most respected flour mills. This was where I really fell in love with the craft. I learned how flour is grown, milled, and transformed – and how much of an impact it has on the flavor, texture, and even the health benefits of what we bake. It was a game-changer for me, and it’s something I’m passionate about sharing with others.

These days, you’ll find me in Chester as the Head Baker at Jaunty Goat, where I get to bring my style of baking to a community I love. It’s here that I’ve been able to combine everything I’ve learned – from the precision of Michelin kitchens to the soulful simplicity of artisan baking.

In 2019, I was honored to be named Cheshire’s Young Chef of the Year, but my real pride comes from seeing people fall in love with baking. Whether it’s through my masterclasses, my work at the bakery, or just chatting with fellow bakers, I’m happiest when I’m sharing what I know and helping others create something amazing.

When I’m not baking, you’ll probably find me experimenting with new recipes, exploring the countryside for inspiration, or just enjoying a good loaf of bread with butter (because let’s be honest, there’s nothing better).
